The extra virgin olive oil of the farm Musignano di Andreoli
sold under the name Villa
Taccini, is produced from the olives that grow on the
hills that face Fondovalle and one of the important
olive groves is that of Poggio
Cavaliere Our extra virgin olive oil Villa Taccini gets its slightly opaque colour due to the choice of not filtering it, but of making it decant naturally by letting it rest for about six months before bottling. In this way the oil deposits most of its suspended particles, which would make more difficult to preserve it, without loosing its characteristics of an artisan product. If the oil has to be bottled before decanting, it is only "slightly" filtered in order to remouve the larger particles that would give problems. Since the oil has not been filtered, it is possible that a slight deposit forms on the bottom of the bottle. This is not a sign of bad quality. If this deposit becomes quite intense, it is advisable to carefully transfer the oil in another bottle, especially, if the oil is not to be consumed in a reasonably short period of time. The extra virgin oil has a particular taste and flavour, that slowly disappears during the time and that could be particularly appreciated when the oil is utilized raw (crudo in Italian). The best way to preserve extra virgin olive oil is to keep it in a cool place and to protect it from light and air.
